To prepare sushi rice:
1. For 100 g rice, 120 ml water
2. Wash the rice and let it drain
3. Soak the rice in water until the rice appears white.
4. Bring briefly to a boil in a closed pot and simmer on the lowest setting for 18 minutes.
5. Remove the pot from the stove and, with a cloth between the pot and the lid, let it steam off for another 5 minutes
